CRUST INGREDIENTS:
1 cup flour
1/2 cup butter (room temp)
1/4 cup confectioner‘s sugar
FILLING:
2 eggs
1 cup granulated sugar
1/2 tsp. baking powder
2-1/2 tbsp. fresh lemon juice
Dash of salt
HOW TO:
Sift flour and sugar into bowl.
Blend in butter with fingertips until well mixed.
Pat evenly into bottom of well-greased 8"x8" pan.
Bake 20 minutes at 350 degrees.
While baking crust, beat eggs.
Add sugar, baking powder, lemon juice and salt.
Pour mixture over baked crust and return to oven for 20-25 minutes.
Cool, sprinkle with confectioners sugar and cut into squares.
