Once when we were teenagers, Recky had a Latke bake off against a friend. Not sure who actually won,
but we still attest, Mom's Latkes are the absolute best.

INGREDIENTS:
6 medium sized red potatoes
1 onion (yellow/white)
2 eggs
1/2 cup flour
1 tsp. salt
Corn oil (1/2" deep in pan)
HOW TO:
Peel and grate potatoes.
(1st grate, 2nd chop in Cuisinart.)
Squeeze water out with hands and put in bowl.
Peel and grate onions.
Squeeze out juice and add to potatoes.
Add eggs, flour and salt.
Stir to make smooth batter.
Drop from spoon into hot oil making pancakes 3 inches in diameter.
Fry under moderate heat and turn.
Place on paper towels.
Keep in oven at 200 degrees until ready to serve. 
Serve with homemade applesauce and sour cream on side.
