INGREDIENTS:
10 oz. bittersweet chocolate, finely chopped
3/4 cup heavy whipping cream
5 tbsp. sugar
2 tbsp. unsalted butter
1 tbsp. dark rum (or Grand Marnier)
1 tbsp. vanilla
1/4 tsp. salt
6 eggs, separated
Pinch fo cream of tartar
Powdered sugar

HOW TO:
Combine first 7 ingredients in heavy medium saucepan. Stir over low heat until smooth. Cool until the mixture is lukewarm.
Whisk egg yolks into chocolate. Beat egg whites and cream of tartar until a soft peak forms. Fold into chocolate in 3 parts.
Butter and sugar 8 ramekins. Divide batter evenly between ramekins. Bake at 350˚ for 20 minutes or less.
