HOW TO:
Preheat oven to 400˚. Melt 2 tbsp. butter in a pan. Add onion and cook until soft - about 5 minutes (don't brown). Remove from heat. Add breadcrumbs, parsley, salt and pepper.

Butter a baking dish. Halve tomatoes and scoop out a little of insides. Place in dish. Season with salt and pepper. Spoon mixture into tomatoes and dot with butter. Bake at 400 for 30 minutes.
