Not sure where this recipe came from originally - the newspaper cutting says "Boman's Noodle Kugel". Luchen Kuchen (noodle kugel) is always served at our Rosh Hashanah and Yom Kippur meals.

INGREDIENTS:
8 oz. package noodles - no yolk
1/4 lb. unsalted butter softened
1/2 cup plus 2 tbsp. sugar
1 pint real sour cream (regular not non fat)
1/2 pint low fat cottage cheese (can use light but not non fat)
1-1/2 tsp. salt
2 tsp. vanilla
5 eggs
Cinnamon & sugar
1 to 1-1/2 Granny Smith apples, sliced thin
Raisins
HOW TO:
Cook and drain noodles.
Beat butter and sugar, add sour cream, cottage cheese, salt and vanilla.
Mix in eggs one at a time, beating after each addition.
Stir in cooked noodles.
Add apples and raisins.
Pour into buttered 8"x8" glass baking dish and sprinkle with cinnamon.
Bake at 350 degrees for 50-55 minutes.
Serve with applesauce.

FOR A 9X13 BAKING DISH:
12 oz noodles
1-1/2 stick butter
3/4 cup + 3 TB sugar
1-1/2 pint sour cream
1-1/2 pint cottage cheese
2-3/4 tsp salt
3 tsp vanilla
